For instance, the Honigverordnung of Germany states that the specialist Blossom Honey must contain at least 60 % fructose and glucose in total, although small amounts of sucrose and maltose are allowed.
KNAUER have developed a fast technique using hydrophilic interaction chromatography for the separation of mono- and disaccharides to distinguish between honey and honey substitute products. This method can detect adulterated honey from the pure product quickly and efficiently.
